In particular in commercial kitchens and food service companies, a grease trap, also known as a grease interceptor, is a plumbing device designed to capture and separate fats, oils, and grease (FOG) from wastewater. It stops FOG from entering the sewer system, where it could clog pipes or pollute the environment. The grease trap functions by letting sewage cool, which causes FOG to solidify and float to the top while the cleaner water passes through and into the sewer. For the grease trap to perform effectively and in accordance with local grease management standards, regular maintenance, cleaning, and proper disposal of the collected grease are important.
